What replaces the face is a filter. With no camera to police, the thing left to police is language, so software on our server checks every message before anyone receives it. Phone numbers, social handles, slurs, sexual content, anything link-shaped or email-shaped, and anyone announcing they are under 18 all get stopped, and the sender is told. Software does miss things, so you can report anyone, which ends that chat, or block them for good. Repeated blocked messages, or several reports from different people, bring an automatic pause on the account while a person looks.
Typing has its own pace: 500 characters per message, a typing indicator so you know a reply is brewing, and no pressure to answer within a second. Is there really no video with strangers?

Can someone still record me?
